Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups summer squash, sliced
  • 4 cups vegetable broth
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add sliced summer squash and cook for 5 minutes, stirring occasionally.
  5. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Use a blender to puree the soup until smooth.
  7. Season with salt and black pepper to taste. Serve hot.
