Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Spinach fresh
  • 4 cups Vegetable broth
  • 1 cup Milk
  • to taste Salt
  • to taste Pepper

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté until soft.
  3. Add fresh spinach and cook until wilted.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Remove from heat and blend until smooth.
  6. Return to pot, stir in milk, and season with salt and pepper to taste. Heat through but do not boil.
