Spicy Vegan Potato Curry

Main Ingredients
- 4 cups Potatoes, diced
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, minced
- 2 tablespoon Curry powder
- 1 teaspoon Cumin
- 1 teaspoon Turmeric
- 1 can Coconut milk
- 1 cup Tomatoes, chopped
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 2 tablespoon Olive oil
- 1 cup Water
Heat the olive oil in a large pot over medium heat.
Add the chopped onions and cook until translucent.
Add the minced garlic and ginger, cook for another minute.
Stir in the curry powder, cumin, and turmeric, cook for another minute.
Add the diced potatoes, chopped tomatoes, coconut milk, and water. Bring to a boil.
Reduce heat and simmer for 20-25 minutes, or until potatoes are tender.
Season with salt and black pepper to taste.
Serve hot with rice or naan.
