Spicy Vegan Mango and Tofu Stir-Fry

Main Ingredients
- 1 block firm tofu pressed and cubed
- 1 mango peeled and sliced
- 1 cup bell pepper sliced
- 1 onion sliced
- 2 cloves garlic minced
- 1 tablespoon soy sauce
- 1 tablespoon sriracha
- 1 tablespoon olive oil
- 1 teaspoon cornstarch mixed with 2 tablespoon water
- 1 teaspoon ginger grated
- 1 tablespoon lime juice
- 2 tablespoon green onions chopped
Heat the olive oil in a wok over medium-high heat.
Add the garlic and ginger, stir-fry for 1 minute.
Add the tofu and cook until golden brown, about 5 minutes.
Add the bell pepper and onion, stir-fry for another 3-4 minutes.
Add the mango slices, soy sauce, sriracha, and cornstarch mixture. Stir well.
Cook for another 2-3 minutes until the sauce thickens.
Remove from heat and stir in lime juice and green onions.
Serve hot.
