Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 medium Bell Pepper, chopped
  • 2 cans Diced Tomatoes (14.5 oz each)
  • 1 can Black Beans, drained and rinsed (15 oz)
  • 1 can Kidney Beans, drained and rinsed (15 oz)
  • 2 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 cup Vegetable Broth

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. 2. Add the minced garlic and chopped bell pepper. Cook for another 5 minutes, stirring occasionally.
  3. 3. Stir in the diced tomatoes, black beans, kidney beans, chili powder, cumin, paprika, salt, and black pepper.
  4. 4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for 30 minutes, stirring occasionally.
  5. 5. Taste and adjust seasoning if necessary. Serve hot.
