Spaghetti Aglio e Olio
A simple and classic Italian pasta dish made with garlic, olive oil, and chili flakes.

- 400 g spaghetti
- 6 cloves garlic thinly sliced
- ½ cup extra virgin olive oil
- 1 teaspoon red pepper flakes
- to taste salt
- ¼ cup fresh parsley chopped
1. Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water and drain the rest.
2. In a skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes, cooking until the garlic is golden brown.
3. Add the cooked spaghetti to the skillet, tossing to coat in the oil. If needed, add some reserved pasta water to loosen the sauce.
4. Season with salt to taste and sprinkle with chopped parsley before serving.
