Slow Cooker Vegan Leek and Potato Soup Recipe

Main Ingredients
- 3 cups Leeks, chopped
- 4 cups Potatoes, peeled and diced
- 1 cup Carrots, chopped
- 4 cups Vegetable Broth
- 2 cloves Garlic, minced
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Thyme
1. Add all ingredients to the slow cooker.
2. Stir to combine.
3. Cook on low for 6-8 hours or until vegetables are tender.
4. Use an immersion blender to blend the soup until smooth, if desired.
