- 2 lbs oxtail
- 2 cups beef broth
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoon tomato paste
- 1 teaspoon thyme
- 2 cups carrots, chopped
- 2 cups potatoes, chopped
- to taste salt and pepper
1. Season oxtail with salt and pepper.
2. In a skillet, brown oxtail on all sides.
3. Transfer oxtail to slow cooker.
4. Add beef broth, onion, garlic, tomato paste, thyme, carrots, and potatoes to slow cooker.
5. Cook on low for 8 hours or until oxtail is tender.
6. Adjust seasoning with salt and pepper before serving.
