Slow Cooker Beef Bourguignon

Main Ingredients
- 2 lbs Beef chuck, cut into 1-inch cubes
- 1 cup Red wine
- 2 cups Beef broth
- 1 cup Carrots, sliced
- 1 cup Mushrooms, sliced
- 1 large Onion, chopped
- 4 cloves Garlic, minced
- 2 tablespoon Tomato paste
- 1 teaspoon Thyme
- 2 tablespoon Olive oil
- to taste Salt and pepper
1. Heat olive oil in a skillet over medium heat. Brown the beef in batches.
2. Transfer beef to slow cooker. Add all other ingredients.
3. Cook on low for 8 hours or until beef is tender.
4. Serve hot, garnished with fresh parsley if desired.
