Ingredients 

Main Ingredients

  • 2 lbs Beef chuck, cut into 1-inch cubes
  • 1 cup Red wine
  • 2 cups Beef broth
  • 1 cup Carrots, sliced
  • 1 cup Mushrooms, sliced
  • 1 large Onion, chopped
  • 4 cloves Garlic, minced
  • 2 tablespoon Tomato paste
  • 1 teaspoon Thyme
  • 2 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat. Brown the beef in batches.
  2. 2. Transfer beef to slow cooker. Add all other ingredients.
  3. 3. Cook on low for 8 hours or until beef is tender.
  4. 4. Serve hot, garnished with fresh parsley if desired.
