Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 cup Shredded cheese
  • 4 Flour tortillas
  • 1 tablespoon Olive oil
  • 1 Bell pepper, diced
  • 1 Onion, diced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a skillet over medium heat. Add diced bell pepper and onion, cook until soft.
  2. Add shrimp to the skillet, season with cumin, chili powder, garlic powder, salt, and pepper. Cook until shrimp is pink and cooked through.
  3. Remove shrimp mixture from skillet. Wipe skillet clean.
  4. Place a tortilla in the skillet, sprinkle half with cheese, add shrimp mixture, and top with more cheese. Fold tortilla over.
  5. Cook until tortilla is golden brown and cheese is melted, flipping once. Repeat with remaining tortillas.
  6. Cut quesadillas into wedges and serve.
