  • 2 Eggplants medium-sized, cut into cubes
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the eggplant cubes, olive oil, salt, pepper, garlic powder, and paprika. Toss to coat evenly.
  3. Spread the eggplant mixture in a single layer on a sheet pan.
