  • 2 cups Brussels sprouts, halved
  • 2 cups Butternut squash, cubed
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • to taste Salt and pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine Brussels sprouts, butternut squash, olive oil, garlic powder, paprika, salt, and pepper. Toss to coat evenly.
  3. Spread the vegetables in a single layer on a sheet pan.
  4. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
  5. Remove from the oven and serve warm.
