Ingredients 

Salad Ingredients

  • 2 fillets Salmon skinless
  • 4 cups Mixed Greens
  • 1 cup Cherry Tomatoes halved
  • ½ cup Cucumber sliced
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Place salmon fillets on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Bake for 10 minutes or until salmon is cooked through.
  4. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  5. Flake the cooked salmon and add to the salad.
  6. Drizzle with lemon juice and additional olive oil if desired. Toss gently to combine.
  7. Serve immediately.
