Ingredients

  • 1 lb Salmon fillet skin removed, cut into chunks
  • 4 cups Chicken broth
  • 2 cups Heavy cream
  • 2 Potatoes peeled and diced
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 tablespoon Butter
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
  2. 2. Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. 3. Stir in the heavy cream and bring to a gentle simmer.
  4. 4. Add the salmon chunks and cook until the salmon is just cooked through. Season with salt and pepper to taste.
  5. 5. Serve hot, garnished with fresh herbs if desired.
