Ingredients

  • 1 cup red lentils rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • ½ cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh mint chopped
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. In a saucepan, bring water to a boil. Add the red lentils and cook for about 15-20 minutes until tender. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooked lentils, cherry tomatoes, cucumber, red onion, parsley, and mint.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour over the lentil mixture and toss to combine.
  4. 4. Serve immediately or refrigerate for later. Enjoy!
