Ingredients 

Main Ingredients

  • 1 kg Pumpkin peeled and chopped
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and garlic, and sauté until soft.
  2. 2. Add the chopped pumpkin and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the pumpkin is tender.
  3. 3. Use a blender to puree the soup until smooth. Return the soup to the pot.
  4. 4. Stir in the coconut milk, salt, and pepper. Heat through, but do not boil.
  5. 5. Serve hot, garnished with a swirl of coconut milk or a sprinkle of fresh herbs if desired.
