Pinto Beans with Mexican Style Seasonings

- 2 cups Pinto Beans dried
- 1 large Onion chopped
- 3 cloves Garlic minced
- 1 tablespoon Olive Oil
- 1 teaspoon Cumin ground
- 1 teaspoon Chili Powder
- 1 teaspoon Paprika
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 6 cups Water
1. Rinse and soak the pinto beans overnight.
2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened.
3. Add the soaked beans, water, cumin, chili powder, paprika, salt, and black pepper to the pot. Stir well.
4. Bring to a boil, then reduce heat to low and simmer for about 2 hours, or until beans are tender.
5. Adjust seasoning to taste and serve hot.
