Main Ingredients
- 5 lb Beef brisket
- ½ cup Kosher salt
- ½ cup Brown sugar
- 2 tablespoon Black pepper coarsely ground
- 2 tablespoon Coriander seeds crushed
- 1 tablespoon Garlic powder
- 1 tablespoon Onion powder
- 1 tablespoon Paprika
- 1 teaspoon Mustard seeds crushed
1. Mix all the spices together in a bowl.
2. Rub the spice mixture all over the beef brisket.
3. Place the brisket in a large pot and cover with water. Let it sit in the refrigerator for 5-7 days, turning occasionally.
4. After curing, rinse the brisket thoroughly and pat dry.
5. Preheat your smoker to 225°F (107°C).
6. Smoke the brisket until it reaches an internal temperature of 195°F (90°C), about 4 hours.
7. Let the pastrami rest for at least 30 minutes before slicing.
