Paleo Baked Eggs in Avocado Recipe

- 2 avocados halved and pitted
- 4 eggs
- to taste salt
- to taste black pepper
- 1 tablespoon chopped chives optional, for garnish
Preheat your oven to 425°F (220°C).
Scoop out some of the avocado flesh to create a larger well for the egg.
Place the avocado halves on a baking sheet.
Crack an egg into each avocado half.
Season with salt and black pepper.
Bake for 15 minutes, or until the egg whites are set.
Garnish with chopped chives, if using, and serve immediately.
