Instructions
In a mixing bowl, combine warm almond milk, yeast, and coconut sugar. Let sit for 10 minutes until frothy.
Add flour, salt, and melted vegan butter to the yeast mixture. Mix until a dough forms.
Knead the dough on a floured surface for 5-7 minutes. Place in a greased bowl, cover, and let rise for 1 hour.
Roll out the dough into a rectangle. Spread softened vegan butter over the dough, then sprinkle with coconut sugar and cinnamon.
Roll the dough tightly into a log and cut into 12 rolls. Place in a greased baking dish, cover, and refrigerate overnight.
Preheat oven to 350°F (175°C). Bake the rolls for 25 minutes or until golden brown.
Mix powdered sugar, almond milk, and vanilla extract to make the icing. Drizzle over warm rolls before serving.
