Ingredients 

Dough

  • 1 cup Almond Milk warmed
  • 1 tablespoon Active Dry Yeast
  • 2 tablespoon Coconut Sugar
  • 3 cup All-Purpose Flour
  • ½ teaspoon Salt
  • ¼ cup Vegan Butter melted

Filling

  • ½ cup Coconut Sugar
  • 2 tablespoon Cinnamon
  • ¼ cup Vegan Butter softened

Icing

  • 1 cup Powdered Sugar
  • 2 tablespoon Almond Milk
  • ½ teaspoon Vanilla Extract

Instructions 

  1. In a mixing bowl, combine warm almond milk, yeast, and coconut sugar. Let sit for 10 minutes until frothy.
  2. Add flour, salt, and melted vegan butter to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes. Place in a greased bowl, cover, and let rise for 1 hour.
  4. Roll out the dough into a rectangle. Spread softened vegan butter over the dough, then sprinkle with coconut sugar and cinnamon.
  5. Roll the dough tightly into a log and cut into 12 rolls. Place in a greased baking dish, cover, and refrigerate overnight.
  6. Preheat oven to 350°F (175°C). Bake the rolls for 25 minutes or until golden brown.
  7. Mix powdered sugar, almond milk, and vanilla extract to make the icing. Drizzle over warm rolls before serving.
