Ingredients 

Main Ingredients

  • 2 cups diced potatoes
  • 1 cup red lentils rinsed
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon ginger minced
  • 2 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 teaspoon salt to taste
  • 1 tablespoon olive oil
  • 1 cup chopped spinach

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
  3. Add the curry powder, ground cumin, and ground turmeric. Cook for another minute.
  4. Add the diced potatoes, red lentils, coconut milk, and vegetable broth. Stir well.
  5. Bring to a boil, then reduce the heat and let it simmer for about 25 minutes, or until the potatoes and lentils are tender.
  6. Stir in the chopped spinach and cook for another 2-3 minutes.
  7. Season with salt to taste and serve hot.
