Okra and Kohlrabi Vegan Breakfast Hash

Main Ingredients
- 2 cups okra, sliced
- 1 cup kohlrabi, diced
- 1 cup potatoes, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
1. Heat olive oil in a large skillet over medium heat.
2. Add the chopped onion and cook until translucent, about 5 minutes.
3. Stir in the minced garlic and cook for another minute.
4. Add the diced potatoes and cook for about 10 minutes, stirring occasionally.
5. Add the sliced okra and diced kohlrabi to the skillet. Cook for another 10 minutes, or until the vegetables are tender.
6. Season with smoked paprika, salt, and black pepper. Stir well to combine.
7. Serve hot and enjoy!
