Ingredients 

Main Ingredients

  • 1 cup Arborio rice
  • 2 tablespoon Olive oil
  • 1 cup Chopped onions
  • 2 cloves Garlic, minced
  • 8 oz Mushrooms, sliced
  • 4 cups Chicken or vegetable broth kept warm
  • ½ cup Grated Parmesan cheese
  • 2 tablespoon Butter
  • to taste Salt and pepper

Instructions 

  1. 1. Heat the olive oil in a large skillet over medium heat. Add the onions and garlic, and cook until softened.
  2. 2. Add the mushrooms and cook until they release their moisture and become tender.
  3. 3. Stir in the Arborio rice and cook for a couple of minutes until it becomes slightly translucent.
  4. 4. Begin adding the warm broth, one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding more.
  5. 5. Continue this process until the rice is creamy and cooked through, about 20-25 minutes.
  6. 6. Stir in the Parmesan cheese and butter. Season with salt and pepper to taste.
  7. 7. Serve hot and enjoy!
