- 1 large Potato Russet or Yukon Gold
- 1 teaspoon Olive oil
- to taste Salt
- to taste Pepper
1. Wash the potato thoroughly and pat it dry.
2. Poke the potato with a fork several times.
3. Rub the potato with olive oil and sprinkle with salt and pepper.
4. Place the potato on a microwave-safe plate.
5. Microwave on high for 5 minutes. Turn the potato over and microwave for another 5 minutes.
6. Check if the potato is tender. If not, continue microwaving in 1-minute increments until done.
7. Let the potato sit for a minute before serving.
