- 2 cups masa harina corn flour
- 1.5 cups warm water
- 1 cup refried beans
- 1 cup crumbled cheese queso fresco or cotija
- 1 cup shredded lettuce
- 1 cup salsa
In a mixing bowl, combine masa harina and warm water. Mix until a dough forms.
Divide the dough into 8 equal parts and shape each into a ball. Flatten each ball into a thick disk.
Heat a skillet over medium heat. Cook each disk for about 2 minutes on each side until slightly golden.
Remove from skillet and pinch the edges to form a border. Let cool slightly.
Spread a layer of refried beans on each sope, then top with cheese, lettuce, and salsa.
Serve immediately and enjoy!
