Instructions
Heat the oil in a saucepan over medium heat.
Add the rice and cook, stirring frequently, until golden brown.
Add the garlic and cook for another minute.
Stir in the tomato sauce and chicken broth. Bring to a boil.
Reduce heat to low, cover, and simmer for 15-20 minutes, until the rice is tender.
Stir in the peas and carrots, and cook for another 5 minutes.
Fluff with a fork and serve.
