Ingredients 

Main Ingredients

  • 2 cups Pasta cooked and drained
  • 1 cup Corn canned or fresh
  • 1 cup Black Beans rinsed and drained
  • 1 cup Cherry Tomatoes halved
  • 1 cup Bell Peppers diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Cilantro chopped
  • ½ cup Feta Cheese crumbled

Dressing

  • ¼ cup Olive Oil
  • 2 tablespoon Lime Juice freshly squeezed
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Cook pasta according to package instructions. Drain and let cool.
  2. 2. In a large mixing bowl, combine cooked pasta, corn, black beans, cherry tomatoes, bell peppers, red onion, and cilantro.
  3. 3. In a small bowl, whisk together olive oil, lime juice, cumin, chili powder, salt, and black pepper.
  4. 4. Pour dressing over the pasta mixture and toss to coat evenly.
  5. 5. Sprinkle feta cheese on top before serving.
