Mexican Corn Off The Cob Salad

- 4 ears corn, husked
- ¼ cup mayonnaise
- ¼ cup sour cream
- ½ cup cotija cheese, crumbled
- ½ cup cilantro, chopped
- 1 lime, juiced
- ½ teaspoon chili powder
- Salt and pepper to taste
Grill the corn until charred, about 10 minutes. Let it cool and cut the kernels off the cob.
In a large bowl, mix the mayonnaise, sour cream, cotija cheese, cilantro, lime juice, and chili powder.
Add the corn kernels to the bowl and mix well.
Season with salt and pepper to taste. Serve immediately.
