Main Ingredients
- 2 cucumbers, sliced
- 1 red onion, thinly sliced
- 3 tomatoes, cut into wedges
- ¼ cup olive oil
- 3 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- to taste salt and pepper
In a large mixing bowl, combine the cucumbers, red onion, and tomatoes.
In a small bowl, whisk together the olive oil, red wine vinegar, and dried oregano.
Pour the dressing over the vegetables and toss to coat evenly.
Season with salt and pepper to taste. Serve immediately or refrigerate for later.
