- 2 tablespoon Olive Oil
- 1 cup Onion, chopped
- 1 cup Celery, chopped
- 1 cup Carrots, chopped
- 3 cloves Garlic, minced
- 4 cups Clam Juice
- 2 cans Diced Tomatoes
- 2 cups Potatoes, peeled and diced
- 2 cans Clams, with juice
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ¼ cup Fresh Parsley, chopped
Heat olive oil in a large pot over medium heat.
Add onion, celery, and carrots. Cook until softened, about 5 minutes.
Add garlic and cook for another minute.
Pour in clam juice and diced tomatoes. Bring to a boil.
Add potatoes, thyme, oregano, salt, and pepper. Reduce heat and simmer until potatoes are tender, about 20 minutes.
Stir in clams with their juice and cook for another 5 minutes.
Garnish with fresh parsley before serving.
