  • 6 medium russet potatoes peeled and cubed
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 3 green onions sliced
  • to taste salt and pepper

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the sour cream and mayonnaise.
  3. 3. Add the cooled potatoes, cheddar cheese, bacon, and green onions to the bowl. Mix well.
  4. 4. Season with salt and pepper to taste. Chill in the refrigerator for at least 1 hour before serving.
