Leftover Mashed Potato Pancakes Recipe
Great way to use up leftover mashed potatoes. Crispy on the outside, soft on the inside.

Main Ingredients
- 2 cups leftover mashed potatoes
- 1 cup shredded cheese
- 1 egg beaten
- ¼ cup flour
- ¼ cup chopped green onions
- to taste salt and pepper
- 2 tablespoon oil for frying
In a mixing bowl, combine mashed potatoes, shredded cheese, beaten egg, flour, green onions, salt, and pepper.
Heat oil in a frying pan over medium heat.
Scoop about ¼ cup of the mixture and form into a patty. Place in the hot pan.
Cook for 3-4 minutes on each side or until golden brown and crispy.
Remove from pan and drain on paper towels. Serve hot.
