Ingredients 

Main Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese
  • 1 egg beaten
  • ¼ cup flour
  • ¼ cup chopped green onions
  • to taste salt and pepper
  • 2 tablespoon oil for frying

Instructions 

  1. In a mixing bowl, combine mashed potatoes, shredded cheese, beaten egg, flour, green onions, salt, and pepper.
  2. Heat oil in a frying pan over medium heat.
  3. Scoop about ¼ cup of the mixture and form into a patty. Place in the hot pan.
  4. Cook for 3-4 minutes on each side or until golden brown and crispy.
  5. Remove from pan and drain on paper towels. Serve hot.
