Ingredients 

Main Ingredients

  • 1 lb Ground Beef
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive Oil
  • 1 can Diced Tomatoes (14.5 oz)
  • 4 cups Beef Broth
  • 1 cup Heavy Cream
  • 2 tablespoon Taco Seasoning
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Sour Cream
  • 1 Avocado, diced
  • 1 Cilantro, chopped for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until fragrant.
  2. Add ground beef to the pot and cook until browned. Drain excess fat.
  3. Stir in taco seasoning, diced tomatoes, and beef broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in heavy cream and shredded cheddar cheese. Cook until cheese is melted and soup is heated through.
  5. Serve hot, topped with sour cream, diced avocado, and chopped cilantro.
