Main Ingredients

  • 4 pieces Chicken Breasts boneless, skinless
  • 2 tablespoon Olive Oil
  • 1 cup Zucchini diced
  • 1 cup Bell Peppers diced
  • 1 cup Tomatoes diced
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, garlic powder, and onion powder.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken breasts until golden brown, about 3-4 minutes per side.
  4. Transfer chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until cooked through.
  5. In the same skillet, add diced zucchini, bell peppers, and tomatoes. Cook until vegetables are tender, about 5-7 minutes.
  6. Serve chicken breasts with vegetable ragout on the side.
