Ingredients 

Main Ingredients

  • 1 cup dried red beans
  • 1 cup long-grain white rice
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell pepper, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 cups vegetable broth

Instructions 

  1. 1. Rinse and drain the red beans. Set aside.
  2. 2. Set the Instant Pot to sauté mode. Add a splash of vegetable broth and sauté the onion, garlic, and bell pepper until softened.
  3. 3. Add the smoked paprika, thyme, oregano, salt, and black pepper. Stir to combine.
  4. 4. Add the red beans, rice, and vegetable broth. Stir well.
  5. 5. Secure the lid on the Instant Pot and set it to manual high pressure for 30 minutes.
  6. 6. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  7. 7. Open the lid, fluff the rice and beans with a fork, and serve hot.
