Main Ingredients
- 1 cup quinoa rinsed
- 1 bunch kale chopped
- 1 can diced tomatoes
- 1 can cannellini beans drained and rinsed
- 1 carrot diced
- 1 stalk celery diced
- 1 small onion diced
- 3 cloves garlic minced
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Set Instant Pot to sauté mode. Add onion, garlic, carrot, and celery. Cook until softened.
Add quinoa, kale, diced tomatoes, cannellini beans, vegetable broth, oregano, and basil. Stir well.
Secure the lid and set to high pressure for 5 minutes.
Once done, allow natural release for 10 minutes, then quick release any remaining pressure.
Season with salt and pepper to taste. Serve hot.
