Ingredients 

Main Ingredients

  • 4 cups potatoes, peeled and diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions 

  1. 1. Set your Instant Pot to sauté mode and add a splash of oil.
  2. 2. Add the onion, garlic, carrots, and celery. Sauté until softened.
  3. 3. Add the potatoes, vegetable broth, salt, and pepper. Stir well.
  4. 4. Secure the lid and set the Instant Pot to manual high pressure for 10 minutes.
  5. 5. Once the cooking time is up, do a quick release of the pressure.
  6. 6. Stir in the coconut milk and use an immersion blender to blend the soup to your desired consistency.
  7. 7. Serve hot and enjoy!
