Ingredients 

Main Ingredients

  • 1 cup Cashews soaked in water for 15 minutes
  • 1 cup Coconut Milk
  • 2 cups Mixed Vegetables carrots, peas, potatoes, cauliflower
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 inch Ginger grated
  • 1 tablespoon Curry Powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon Turmeric
  • to taste Salt

Instructions 

  1. 1. Blend soaked cashews and coconut milk until smooth. Set aside.
  2. 2. Set Instant Pot to sauté mode. Add onions, garlic, and ginger. Sauté until onions are translucent.
  3. 3. Add curry powder, garam masala, turmeric, and salt. Stir well.
  4. 4. Add mixed vegetables and the cashew-coconut milk blend. Stir to combine.
  5. 5. Close the lid and set the Instant Pot to manual mode for 5 minutes.
  6. 6. Once done, quick release the pressure. Stir well and serve hot.
