Instant Pot Vegan Corn Congee Recipe
A simple and comforting vegan corn congee made in the Instant Pot.

Main Ingredients
- 1 cup Jasmine rice
- 4 cups Vegetable broth
- 2 cups Corn kernels fresh or frozen
- 1 teaspoon Salt to taste
- 1 tablespoon Soy sauce
- 1 teaspoon Sesame oil
- 2 cloves Garlic minced
- 1 inch Ginger minced
- 2 stalks Green onions chopped
Rinse the rice under cold water until the water runs clear.
Add the rinsed rice, vegetable broth, corn kernels, salt, soy sauce, sesame oil, garlic, and ginger to the Instant Pot.
Close the lid and set the Instant Pot to 'Pressure Cook' on high for 20 minutes.
Once the cooking time is up, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
Open the lid and stir the congee. Adjust seasoning if needed.
Serve hot, garnished with chopped green onions.
