Instant Pot Vegan Cauliflower Soup Recipe

Main Ingredients
- 1 head Cauliflower chopped
- 1 medium Onion diced
- 3 cloves Garlic minced
- 4 cups Vegetable Broth
- 1 cup Coconut Milk
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
1. Set your Instant Pot to sauté mode and add a splash of oil. Add the diced onion and minced garlic, and sauté until softened.
2. Add the chopped cauliflower, vegetable broth, salt, and pepper. Stir to combine.
3. Secure the lid on the Instant Pot and set it to high pressure for 10 minutes.
4. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
5. Carefully open the lid and use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
6. Stir in the coconut milk and adjust seasoning if necessary. Serve hot.
