Ingredients 

Main Ingredients

  • 1 cup Dried mixed beans
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Vegetable broth
  • 1 cup Diced tomatoes
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and pepper

Instructions 

  1. 1. Rinse and sort the dried beans.
  2. 2. Set the Instant Pot to sauté mode and add a splash of oil. Sauté the diced onion and minced garlic until translucent.
  3. 3. Add the rinsed beans, vegetable broth, diced tomatoes, cumin, paprika, salt, and pepper to the Instant Pot.
  4. 4. Close the lid and set the Instant Pot to manual high pressure for 30 minutes.
  5. 5. Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  6. 6. Open the lid, stir the soup, and adjust seasoning if necessary. Serve hot.
