Main Ingredients
- 1 lb Chicken breast boneless, skinless
- 4 cups Chicken broth
- 2 Carrots sliced
- 2 Celery stalks sliced
- 1 Onion diced
- 2 cloves Garlic minced
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
- 1 teaspoon Dried thyme

1. Turn on the Instant Pot and select the sauté function. Add a bit of oil and sauté the onions, carrots, and celery until softened, about 5 minutes.
2. Add the garlic and sauté for another minute.
3. Add the chicken breast, chicken broth, salt, pepper, thyme, and parsley. Stir to combine.
4. Close the lid and set the Instant Pot to high pressure for 10 minutes.
5. Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
6. Remove the chicken breast, shred it with two forks, and return it to the pot. Stir to combine.
7. Serve hot and enjoy!
