Ingredients 

Main Ingredients

  • 1 kg beef, cubed
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 0.5 cup red wine
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
  2. Add onions and garlic, cook until softened.
  3. Stir in carrots and potatoes, cook for another 5 minutes.
  4. Add diced tomatoes, beef broth, red wine, oregano, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 2 hours, or until beef is tender.
