Main Ingredients
- 1 kg beef, cubed
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 can diced tomatoes
- 2 cups beef broth
- 0.5 cup red wine
- 2 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
Add onions and garlic, cook until softened.
Stir in carrots and potatoes, cook for another 5 minutes.
Add diced tomatoes, beef broth, red wine, oregano, thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 2 hours, or until beef is tender.
