Ingredients 

Main Ingredients

  • 1 cup Gluten-free flour
  • 1 tablespoon Sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ¼ teaspoon Salt
  • 1 cup Almond milk or any lactose-free milk
  • 1 Egg
  • 2 tablespoon Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. In a mixing bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix the almond milk, egg, vegetable oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a non-stick skillet over medium heat. Pour ¼ cup of batter onto the skillet for each pancake.
  5. Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
  6. Serve warm with your favorite toppings.
