Main Ingredients
- 2 cups Gluten-free pasta
- 2 cups Cooked chicken breast, diced
- 1 cup Cherry tomatoes, halved
- 1 cup Cucumber, diced
- ½ cup Red onion, thinly sliced
- ¼ cup Olive oil
- 2 tablespoon Lemon juice
- 1 teaspoon Dried oregano
- to taste Salt and pepper
1. Cook the gluten-free pasta according to the package instructions. Drain and set aside.
2. In a large mixing bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, and red onion.
3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
4. Pour the dressing over the pasta salad and toss to combine.
5. Serve immediately or refrigerate for later.
