Ingredients 

Waffles

  • 1 cup Gluten-Free Flour
  • 1 tablespoon Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • 1 cup Milk
  • 1 Egg beaten
  • 2 tablespoon Butter melted

Chicken

  • 2 pieces Chicken Breasts boneless, skinless
  • 1 cup Buttermilk
  • 1 cup Gluten-Free Flour for dredging
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 cup Vegetable Oil for frying

Instructions 

  1. Preheat your waffle iron.
  2. In a large bowl, mix together the gluten-free flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Pour the batter into the preheated waffle iron and cook according to the manufacturer's instructions until golden brown and crisp.
  5. While the waffles are cooking, heat the vegetable oil in a frying pan over medium-high heat.
  6. In a bowl, combine the gluten-free flour, paprika, garlic powder, salt, and black pepper.
  7. Dip the chicken breasts in the buttermilk, then dredge in the seasoned flour mixture, shaking off any excess.
  8. Fry the chicken breasts in the hot oil until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.
  9. Serve the fried chicken on top of the waffles. Enjoy!
