Ingredients

  • 1 lb Chicken Thighs cut into bite-sized pieces
  • 1 lb Andouille Sausage sliced
  • 1 cup Onion diced
  • 1 cup Bell Pepper diced
  • 1 cup Celery diced
  • 4 cloves Garlic minced
  • 1 cup Gluten-Free Flour
  • ½ cup Vegetable Oil
  • 6 cups Chicken Broth
  • 2 teaspoon Cajun Seasoning
  • 2 pcs Bay Leaves
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • ½ cup Green Onions chopped, for garnish
  • ¼ cup Fresh Parsley chopped, for garnish

Instructions 

  1. 1. Heat the oil in a large pot over medium heat. Add the gluten-free flour and cook, stirring constantly, until the mixture turns a deep brown color to make a roux.
  2. 2. Add the onions, bell pepper, and celery to the roux. Cook until the vegetables are tender.
  3. 3. Stir in the garlic and cook for another minute.
  4. 4. Add the chicken and sausage to the pot. Cook until the chicken is no longer pink.
  5. 5. Pour in the chicken broth, and add the Cajun seasoning, bay leaves, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 45 minutes.
  6. 6. Remove the bay leaves. Serve the gumbo over rice and garnish with green onions and parsley.
