Gluten-Free Broccoli and Cheese Soup

Main Ingredients
- 4 cups broccoli florets
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup milk (or dairy-free alternative)
- 2 tablespoons gluten-free flour
- Salt and pepper to taste
In a large pot, sauté the onion and garlic until soft.
Add the broccoli and broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
Use an immersion blender to blend the soup until smooth.
Stir in the gluten-free flour and cook for a few minutes until the soup thickens.
Add the milk and cheese, stirring until the cheese is melted and the soup is creamy.
Season with salt and pepper to taste.
