Ingredients

  • 4 cups broccoli florets
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk (or dairy-free alternative)
  • 2 tablespoons gluten-free flour
  • Salt and pepper to taste

Instructions 

  1. In a large pot, sauté the onion and garlic until soft.
  2. Add the broccoli and broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
  3. Use an immersion blender to blend the soup until smooth.
  4. Stir in the gluten-free flour and cook for a few minutes until the soup thickens.
  5. Add the milk and cheese, stirring until the cheese is melted and the soup is creamy.
  6. Season with salt and pepper to taste.
