Garden Fresh Tomato Soup
A simple, fresh, and delicious tomato soup made from garden-fresh tomatoes.

Main Ingredients
- 2 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh tomatoes, chopped
- 2 cups vegetable broth
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
- ¼ cup fresh basil, chopped
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the chopped tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Use a blender to puree the soup until smooth. Return to the pot.
Season with salt and black pepper to taste. Stir in the fresh basil just before serving.
