Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh tomatoes, chopped
  • 2 cups vegetable broth
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • ¼ cup fresh basil, chopped

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the chopped tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Use a blender to puree the soup until smooth. Return to the pot.
  6. Season with salt and black pepper to taste. Stir in the fresh basil just before serving.
