Ingredients 

Main Ingredients

  • 1 cup Arborio Rice
  • 2 tablespoon Olive Oil
  • 1 Onion, finely chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 1 cup Mixed Vegetables (e.g., bell peppers, peas, carrots)
  • 1 tablespoon Nutritional Yeast
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat the olive oil in a large pan over medium heat.
  2. 2. Add the chopped onion and garlic, and sauté until translucent.
  3. 3. Add the Arborio rice and stir to coat with the oil.
  4. 4. Gradually add the vegetable broth, one cup at a time, stirring frequently until the liquid is absorbed before adding more.
  5. 5. Once the rice is almost cooked, add the mixed vegetables and cook until tender.
  6. 6. Stir in the nutritional yeast, and season with salt and pepper to taste.
  7. 7. Serve hot and enjoy your vegan fusion risotto!
